Pondweed Stew

    This is my grannies' recipe - simple yet so tasty.

    Ingredients:
    2 bunches of water blommetjies [that is what we call Pondweed (Aponogeton distachyos) here in the Cape]
    1.5 kg mutton breast, diced
    15 ml of cooking oil
    2 chopped onions
    1 large cooking apple
    250 ml meat stock, heated
    15 ml salt
    3 ml pepper

    Method:
    1. Soak the pondweed in salted water for about 30 minutes. Cut the flowers from the stalks, rinse again and dry.
    2. Brown the meat in heated oil, add the onions and saute for 5 minutes.
    3. Add the remianing ingredients, including the flowers (waterblommetjies), cover and simmer for 2 hours, or until the meat is tender. Replenish with hot stock if necessry.
    4. Do not stir too often as it may break up the flowers. If you use tinned flowers, add them in the last 15 minutes.
    Voila ready to serve with any type of carbs of your choice be it rice or pasta or bread.
