IMG_2165.JPG We've had the plant for a while but this is the first time it's done this. There's a long shoot or something coming out of the top. This is normal I take it. Should I just let it go?

It is blooming. A mature, well established plant growing in the right conditions will possibly bloom once a year.
Pat yourself on the back, you have been giving it what it needs.

Yes, it's going to bloom. It looks perfect! Keep doing whatever you've been doing!

IDK what species it is, but it's not A. vera. There are around 500 species of Aloe, and some plants from other genera can be quite similar looking, like Gasteria.
