Just finished off a plate full and it was yummy. Even Richard ate it and like it and that says a lot. Tomorrow I'm going to reheat with some spaghetti sauce. Spaghetti Squash Lasagna with Broccolini ( I use broccoli) Micowave or bake a spaghetti squash. Stir Stir Stir it will scorch Saute 1 bunch broccoli ( I used about 1 1/2 cups broccoli) 3-4 garlic cloves 1/4 tsp. crushed red pepper ( option) for about 2-3 minutes ADD 2 TBS. water or more and cook until broccoli is tender. Scrape spaghetti squash from shell into a bowl. ADD 3/4 cup mozzarella 1/4 cup. shredded parmesan 3/4 tsp. Italian seasoning 1/2 tsp. salt 1/4 tsp. pepper And sauted broccoli Stuff shells and Bake 350* until heat through sprinkle with more mozzarella and place under broiler until melted.
This looks really good. We like spaghetti squash in place of regular noodles. Not sure I could get broccoli past hubby but I could leave it out of his portion.
mmmm ... that looks delicious! I am the only one that will eat squash here anymore, but I think I'd like to try this recipe
Just made some tonight for dinner. Mixed mine with eggplant & spaghetti sauce. Saved the seeds to plant.
Eggplant sounds good. I reheated my leftovers with spaghetti sauce and it was very good. I also saved the seeds. Anyone want spaghetti squash seeds?
