whats your best zucchini recipe?

    i'm staying on top of my zuchini crop at the moment, but would like to make more stuff from it that i can freeze or can.

    As for my best recipe.

    thinly cut with lots of olive oil, garlic and pine nuts and fried then mixed with linguine.

    my wife did a great one recently with yellow zuchini, which was julienne cut zuchini and carrot (she has a hand scraper that juliennes) mixed with a small amount of onion, sesame seeds, sesame oil and rice vinegar. for an oriental salad. tasted amazing.

    I have been really enjoying stuffed zucchini this year. I stuff it with tomato, basil, mushrooms, garlic, cheese and sometimes spinach....what ever I have in the fridge ... grate cheese on top and then broil. YUM! I like them cold too :)

    I have a cake recipe somewhere....Mom made cookies with chocolate chips in them when I was a kid. I liked them if she didn't go too heavy on the cinnamon :-o

    would love to have the brownie recipe please I made my first zuchini bread the other day and omgosh it was so good I got several recipes online then ajusted to make with the slenda so therefore being diabetic it was pretty safe to eat

    Best zucchini recipe? Go to church, find out who didn't lock their cars, and place in back seat as much zucchini as will fit! Just kidding, I think . . . .

    Zucchini Moussaka

    3 medium zucchini, sliced thin
    1 medium onion, chopped
    2 tblsps. oil
    1 lb. ground beef
    8 oz. tomato sauce
    1 minced clove garlic
    1/2 tsp. salt
    1/4 tsp. cinnamon
    1 c. cottage cheese
    1 beaten egg
    1/4 c. Parmesan cheese, grated

    Brown zucchini and onion lightly in oil. Place in a 3 qt. baking dish. Brown ground beef and pour off excess fat. Stir in tomato sauce, garlic, salt and cinnamon. Spoon over zucchini. Blend the cottage cheese and egg. Spoon over the meat mixture. Top with grated Parmesan and bake for 30 min. at 350 degrees.
    Serves 4-6. This recipe can be doubled. Freezing is not an option.

    OK, here is the Zucchini Brownie recipe I use.
    1/2 cup veg oil
    1 1/2 cups sugar
    2 tsp vanilla extract
    2 cups all purpose flour
    1/2 cup unsweetened cocoa powder
    1 1/2 tsp baking soda
    1 tsp salt
    2 cups shredded zucchini
    Preheat oven to 350° F. Grease and flour a 9X13 pan (I usually just spray with Pam or no stick spray)
    In large bowl mix oil, sugar and vanilla until well blended. Combine the flour, cocoa, baking soda and salt and then stir into sugar mixture. Fold in zucchini. (You could add 1/2 cup of chopped walnuts here if you like) Spread evenly into pan. Bake for 25 minutes or until brownies spring back when touched. I don't usually add icing, but if you want, mix together and spread on cooled brownies:
    6 tblsp unsweetened cocoa powder
    1/4 margarine
    2 cups icing sugar
    1/4 cup milk
    1/2 tsp vanilla

    thanks guys, the brownie mix tastes awesome out of the bowl, so cant wait to see how tastes cooked.

    never thought of doing moussaka (or Moose Kaka as my wife calls it)and must admit its not a dish i've cooked before. so looking forward to cooking that this week.

    I have to admit before adding the Zuchini I was unsure as it was very dry.

    This one is not for storage, sorry. But it will give you something to do with zukes for breakfast. Shred fresh zuke, about a half cup per person. Sautee in butter or canola til reduced by half. It will be very creamy. Serve with scrambled eggs, YUM!

    I grate a lot of it to freeze for zuchinni bread in winter !! Try fritters, saute grated zuchinni,diced onion and a bit of hot pepper till almost done, make a cornbread batter, mix in zuchinni, onions, pepper and fry in small amount of olive or canola oil on med heat till brown. As a side dish, bread with beans or peas, its excellent.

    Zucchini bread, (just replace for carrots or bananas in your favorite recipe)

    grilled zucchini (toss spears in olive oil, use hot grill for stripes, toss with lemon juice and seasoning)

    Chopped and baked with stewed tomatoes and garlic, topped with mozzarella.
