zucchini bread

    Does anyone have a recipe for zucchini bread?

    Zucchini Muffins

    2 eggs
    1 cup sugar
    1/2 cup oil
    1 Tablespoon Vanilla
    2 cups shredded zucchini

    2 cups flour
    1 teaspoon baking soda
    3/4 teaspoon baking powder
    1/2 teaspoon salt
    1 1/2 teaspoons cinnamon
    1/2 cup chopped nuts (pecans or walnuts)
    Combine first 4 ingredients, add zucchini and set aside.
    Combine dry ingredients, add liquids and mix well, add nuts (I really like cinnamon and usually add more than called for).

    Pour into muffin pans with or without papers and bake at 350 degrees for 20 min. Makes 2 dozen.
    You can also bake in a bread pan, just don't fill pan more than half full....but I don't know the baking time, probably the same as other quick breads.

    Looks good! We have a recipe that involves miniature chocolate chips to make loaves of bread. It is downright addictive, and freezes well too.

    Hi Primsong,
    I don't know that I would want to waste chocolate chips with the zucchini, I would rather just eat them plain.:-D
    The bread/muffins are wonderful tho espicially with additional cinnamon, but that is just my opinion and it also freezes well. :-D

    Oh yeah! A person can never have too much cinnamon - I always double both that and the vanilla in mine. I may give this one a try next large squash that comes along. :)

    My kids like those too - I did when I was younger. Guess I am just officially a fuddy-duddy grownup now, heh.

    I put raisins in my zucchini bread or coffee cake or muffins. Whatever I happen to be baking with zucchini in it. Cinnamon, too. Dooley
