Zucchini Gratin

    I thought I would share what I made yesterday. I am on the last of my tomatoes for this year and my sister in law donated the zucchini, the onions and goat cheese were store bought....oh well here is my gratin, I did use a home made pesto with this..... here is where I got the recipe and it really is delish!

    That sure looks and sound delicious! I love zucchini and this will just have to be the next way to have it.

    Thank you, it surely was delish, the only thing I can recommend is to salt the squash to get some of the liquid out before cooking.....I will also use Roma tomatoes next time since they are lower moisture content!
