Black Bean Chocolate Cake

    This was for the diabetic in my life.

    Not bad for a first attempt. It's no- flour. One can of black beans, rinsed and pureed, 5 eggs, maple syrup, shortening, vanilla, cocoa powder, baking powder, baking soda, and a little salt.

    I thought it was a little more dry than I like, but then the recipe called for baking chocolate too that I didn't have. I didn't frost it. The recipes claim you can't taste the beans, and I agree.

    This was actually pretty good. I think next try will have some monk fruit sweetener to sweeten it up a little more, and maybe increase the shortening a little bit.

    We had chickpea spaghetti the other night too. Not too bad, but I thought it was a little gummy. For sauce, sautéed mushrooms and walnuts, in olive oil, with garlic.

    Thanks. As it is, it won't win "The Great British Bake Off"! But it is actually quite good, and if I hadn't left out the frosting and extra baking chocolate, I think it would have been even better.

    Interesting recipe’s … I have seen cup microwave cake and brownie recipes haven’t tried them yet - on you tube..
    I like black beans will give it a try some time.

    I substituted butter-flavored crisco instead of coconut old, because I had it on hand.

    I don't know why I thought it called for baking chocolate. I don't see it now.

    I'd like to try making it with coconut oil, and some sort of diabetic-friendly frosting too,

    Alrighty nice … that is my kind of recipe easy fast . Just add whip cream. Yumm..

    I made this again today, with two changes.

    First, I used black beans that I soaked and cooked myself, instead of canned beans. I used a full 15 ounces by weight, which was 2 cups in a glass measuring cup. That was more than the recipe stated.

    Also, I bought coconut oil, which I used instead of the shortening.

    This time, the cake was lighter and moister. I thought it was really a good chocolate cake. This is a very good cake.

    It's still hard to believe it's made from beans!

    Oh mate, that sounds like an interesting and tasty adjustment; it’ s the way my Bride cooks—
    She reads recipes then cooks the dish with her own twist. Hey, I never complain. It seems you also have that talent.
