Three Day Sweet Pickles

About 18 cucumbers, 6"-8" long.
Into a crock, slice thin as many of the cukes as a gallon of water will cover. Add 1 cup pickling lime. Cover crock with a towel and let stand 24 hours.

2nd day -
wash slices thoroughly, wash crock, return slices to crock.
In a non-aluminum pot, heat but NOT boil 3/4 gallon white vinegar and 4.5 pounds of granulated sugar. Pour over slices, weigh them down to keep all of them under the surface. Cover with towel and let stand 24 hours.

3rd Day -
Remove slices from syrup. In non-aluminum pot, heat syrup to boil.
Add slices and boil for 20 minutes or until all slices look clear.

Pour into hot jars...will make 7 quarts or 14 pints
Into each jar also add......

Quart jars.......1/2 teaspoon pickling salt
1 teaspoon pickling spices

Pint jars........1/4 teaspoon pickling salt
1/2 teaspoon pickling spices

Seal and wait to hear "ping" the seal makes when the vacuum is formed. Store in dark, cool cabinet.

Toni sounds great, now all I have to do is grow the cucumbers Very Happy BTW what is pickling Lime? Anyone know if we can get it in the UK?

Hi Pongo,

If you go to google and enter pickling lime, you will come up with at least one brand, Mrs. Wages Pickling Lime. I don't know about overseas orders.
