In a non-aluminum pot, heat but NOT boil 3/4 gallon white or Apple Cider vinegar and 4.5 pounds of granulated sugar. Pour over slices, weigh them down to keep all of them under the surface. Cover with towel and let stand 24 hours. 3rd Day - Remove slices from syrup. In non-aluminum pot, heat syrup to boil. Add slices and boil for 20 minutes or until all slices look clear. Pour into hot jars...will make 7 quarts or 14 pints Into each jar also add...... Quart jars.......1/2 teaspoon pickling salt 1 teaspoon pickling spices Pint jars........1/4 teaspoon pickling salt 1/2 teaspoon pickling spices Seal and wait to hear "ping" the seal makes when the vacuum is formed. Store in dark, cool cabinet.
