They keep slugs off your plants! Apparently, and I don't remember the science behind it, but sluggies are repelled by the caffine I think. As for why coffee grounds are good for the soil, any organic matter is good for the soil. As it breaks down, it feeds the plants, opens the soil structure, encourages goodies like worms in, improves water retention. But not in too huge quantities, because I believe it can also starve plants if too much is used....who knows, all that caffine, you could end up with hyperactive hostas!
