Tortilla Pie (Uses Black Beans)

    Tortilla Pie

    1 Cup frozen corn
    2 Green onions sliced
    1 tsp cumin
    1 1/2 c. salsa
    1 can (15 0z - 19 oz) black beans (rinsed and drained)
    4 buritto size tortillas
    1 pkg (8 oz) shredded Mexican cheese (I've used other kinds)
    2 t cilantro

    Spray cookie sheet with Pam. Spray skillet also add corn onions, cumin and cook 3 minutes. Remove from heat, stir in salsa and beans.

    Place 1 tortilla on cookie sheet and top with 1 cup bean mix and 1/2 cup cheese. Repeat for 2 more layers. Top with remaining tortilla and cheese.

    Bake 10 minutes. 450 degrees. Top with cilantra and cut into wedges.

    We try to have this once a week. I use my canned salsa from the vegetables in my garden. I use dried cilantro.

    I make a batch of burrito filling with pinto beans (left over) or refried beans, ground beef, hot taco seasoning mix, wonder if black beans would work for that. I like something for lunch that is quick and easy since hubby doesn`t eat lunch and its only me. I have never eaten black beans but guess I need to give them a try. Maybe they have dry ones here.
