Apple Nut Bread recipe

    For all of you who are overwhelmed with apples this time of year (Sojerd, hear me?) here is a way to use up some of them. This bread freezes well, and with a dollop of whipped cream, makes a great fall dessert.
    Apple Nut Bread
    3.c. flour
    1 1/2 tsp.cinnamon (I add 1/8 tsp, ground cloves, 1/4 tsp. nutmeg to the cinnamon)
    1 tsp. baking soda
    1 tsp. salt
    1/4 tsp. baking powder
    In a large bowl beat 3 eggs, 2 c. white sugar, 1 c. vegetable oil
    1 tblsp. vanilla (that sounds like a lot, but it really is needed)
    2 c. diced peeled apples
    1/2 c. walnuts (I use pecans, but really, who cares?)
    1 tsp. flour

    Mix flour, cinnamon and spices, soda, salt and baking powder together. Beat eggs and add sugar and oil.
    Add vanilla and dry ingredients.
    Mix the tsp. of flour with the nuts (this keeps them from congregating in one spot) and add to batter.
    Pour into two greased loaf pans and bake at 350 degrees for one hour.

    This dough is very thick and your biceps are going to get a work out mixing it, but it really is worth the effort!

    Jane— Yes ma’am, I hearsya. I shall show the Bride your recipe. I don’t know exactly how we would bake it here though. We have no oven. Still, I shall see what can be done.

    You can actually bake if you have an iron skillet and good fitting lid ! Look for chuck wagon cooking online ! Same way the pioneers did ! Might need two of them !

    A chuck wagon. Hmmmmm..... I shall look and see if any cattle drives are going on somewhere at the moment.

    Ha !! You may be surprised at what you can learn from them ! Better look around here ! Usually someone is doing chuck wagon cooking ! They baked biscuits easy enough,,, cake or pie should be a breeze to make !

    Today I tried your recipe. It is smashing! One of the best apple recipes I have ever managed to make, so thank you very much for that @marlingardener.

    Ah Tetters, you are so kind! I'm glad you liked the bread, and I hope Zigs liked it, too.
    My biceps aren't quite that large. Go for it, girl!
