Beet relish

    8 cups of diced beets (cooked and skinned)
    2 cups diced onion
    2 1/2 cups of apple cider vinegar
    1 1/4 cups of sugar
    2/3 cup prepared horseradish
    2 tsp pickling salt
    1 1/2 tsp fresh ground pepper
    1/4-1/2 tsp ground red pepper
    Bring to a boil and then simmer all the ingredients for 12 minutes.
    Spoon into sterilized jars, de-bubble, wipe rims, put on lids and rings and waterbath for 15 minutes.
    This recipe made 10 half pint jars of relish.
    Wonderful with sausages :)
