Does anyone preserve their food?

    Does anyone preserve their food? Today I am canning apple pie filling and plain apples in light syrup.

    I decided to post some pics here just for the experience. There are many more in "my garden".

    It was a bedroom with a hallway door. When I saw the house at first I said out with the door. Out it in from the kitchen and use half for my pantry and the other half is accessible from my bedroom for a walk in closet. But my pantry is the best ever.

    I also freeze some things, and have some dehydrators but don't use them much and also built a small root cellar but it's also not in use. Maybe this year we will test it.

    I actually can sit in it. As long as the heat was off.

    I can carrots, pickles, beans, Tomatos, beats. I also freeze corn. Canning is a dieing art around here. Sad but true. I love to do it.

    That is an amazing cooker, not seen one like that before. It looks like a hot water bath canner. At first, when I read 80 quarts, I was trying to count if you actually had 80 quart jars in there. :rolleyes: Duh, I finally figured out that it was the size of the cookpot. Do you also use a pressure cooker for non-acid foods?

    were slowly filling our root celler.
    so far this year we have done, toms, peppers, chillis, peaches, jams. plus a load of frozen veg

    I have frozen a lot of garden produce this year. I wanted to learn to 'can' this year but ran out of time and produce LOL It is on the top of my list for next year :)

    It's always a goal of mine. I freeze a few things, but unfortunately for my waistline it's usually cookies ;) I do dry a few herbs and freeze a few in ice cube trays too. One of these days...I hope. :stew1:

    Karrma, I pc low acid foods and h2o bath high acid foods.

    Netty, I would love to see pics of your root cellar. I created one many years ago but my daughter got sick right after that and I haven't done anything with it since. I plan on watching the temp this winter and putting maybe apples and carrots in it to see how they do.

    Please post some pics????

    Water bath, pressure canning, and freezing are all use here. I think we'll need another freezer for next year, what with squirrel, rabbit, venison, and all the domestic meat too.

    I also do canning, both h2o and pc, I freeze, dehydrate herbs and make concentrated juice in my steam juice extractor and p.c. chicken and beef. I try to put up anything in the garden that I think we will eat.

    Danjensen, Have a question about your root cellar. What temp do you keep it at on the Winter?. what do you keep in it?

    I will buy what ever is on sale for the week in bulk and either can or freeze it. Somethings we like canned and somethings we like frozen.

    I see asparagus is cheep this week. I would can some and freeze some. Also corned beef points are on sale so I would can that. That's my goal for now.

    Love the size of your 80 qt pot. I can, freeze, dehydrate and love to enjoy all of those activities when the fruits and veggies are not in season. Very satisfying when you can use up everything in the garden.
