Hot German Potato Salad

    6 slices of Bacon
    1/2 cup chopped onion*
    2 Tablespoons of flour
    2Tablespoons of Sugar (or to taste)
    1 1/2 teaspoons salt
    1 teaspoon celery seed
    dash of black pepper
    1 cup water
    1/2 cup vinegar
    6 cups sliced cooked potatoes (I boil with their jackets on, cool, peel and slice)

    cook bacon till crisp; drain and crumble (reserve 1/4c drippings). cook onion in reserved drippings until soft. Blend in flour, sugar, salt, celery seed and pepper. Slowly add water and vinegar stirring with a whisk; cook and continue to stir until bubbly. Add bacon and potatoes. toss lightly, heat through (about 10 min). Trim with parsley and pimento if desired. Makes 8-10 servings.

    * optional...I don't use onions. I add butter if I don't have enough bacon fat to get the flour saturated with oil before adding the water. Otherwise the flour won't whisk into the water and make a nice thick sauce.
    I also double the recipe most times.

    I do add some garlic, though.

    Oh, that sounds so very, very good! I have some nice sausage in the fridge, and your potato salad (with onions!) and cornbread will make a great supper tomorrow.

    Jane, You a have a really nice supper tomorrow night, We really like it, but I don't make it terribly often...bacon, you know! I could eat it (bacon) every day of the week, but I am not sure I should, so I try not to keep too much on hand.

    I have saved it in my recipes. It sounds very good and I plan on making it next week sometime. This week is a complete loss. I have so much to do already.

    You are welcome, Ronni. I hope it is comparable to the other recipe you tasted.

    Also, feel free to tweak the recipe...add more vinegar or sugar to suit your taste.

    Carolyn, that is the best hot potato salad we've ever had! I think it will be on our menu fairly frequently. Thanks for a great recipe!
