    Cayuga Morning: Fresh eggs, those that are less than one week old, just don't peel well. I mark our eggs from the hens with the date on which they are collected, and hard boil those that are seven to ten days old. Fresh eggs are also more difficult to scramble. The albumen doesn't break up and emulsify with the yolk. I think the hens are playing with our minds, and recipes!

    Good to know.

    BTW, I had a friend who went into a long and very in-depth discussion about how to boil eggs so that they peel well. When she was finally done, I put my arm around her shoulder and said "Cynthia, you do know, don't you, that this is a first world problem, not a second or third world problem". Fortunately she laughed.

    If I want boiled eggs,, I buy them at the store rather than from the feed store that sells fresh eggs ! And for a sure fire way to get perfect eggs,,add a bit of salt to the boiling water and peel while still pretty warm ! I also sometimes crack the shells on eggs and put them back in the warm water if I have a bunch to do ! Main thing is to keep them warm,,don`t let them go cold !

    I agree that peeling "new" eggs indeed are more of a challenge; consequently I never boil new eggs to eat with brekkie.
    I usually boil the eggs in water with a bit of salt. To be fair, they more often than not come out oké, it is just when they don't that I become irrational. haha.
    I once saw an YouTube where one could blow a hard-boiled out of its shell. I tried it myself and it did indeed work. It is not a technique that I have ever used again though.

    S, I have an egg cooker. I can cook eggs fresh from the coop and they peel just fine. I thought it was the most ridiculous gift I ever got... We have been married 30 years now and I am still using it. If you steam them rather than boil (submerged) them they seem to peel a bit easier.

    SJ, that blowing method looks like you'd blow a lung out too.

    Carolyn, glad to hear the egg cooker turned out to be a great gift! I wouldn't have thought so either.

    it is on a timer with a measure of water depending on how cooked you want them. soft boiled all the way to greenring I suppose.
