If you add 2 Tablespoons of lemon juice you can water bath it for 40 minutes. I just put a tablespoon of lemon juice in the bottom of every jar so I that is ready for the sauce.

Also, You can freeze it till you get enough to make a batch for canning. Thaw it, get your jars ready, heat the sauce in one batch, again add the lemon juice to each jar and lid them and water bath them.

I freeze my chicken and all my broths in pint baggies and when I get enough to fill my canner, I thaw them and them pressure can them.

I decided to can the sauce after all. I got eight pints plus a little left over. Looks like we will be having spaghetti tonight for supper with what is remaining. Thanks so much for your help!

Barb, are you a PA Deutsch descendant? I haven't seen a pantry like that since I left my mothers table. Your husband is very fortunate.

I have done extensive research on my family history and yes they came from Germany in 1738 on all sides of my family. They actually landed just about half hour from where I live now. This is not where I was raised, nor is it where I had lived during my young adult life but it's where I choose to retire. Actually a part of my family chain settled this little place, not a town, starting the only ice house in the 1800's, just quarter mile from my house. They are buried all over near my house. I can even claim that Johnny Appleseed was a part of my family.

Yes I tell him that every day. :D :D :D Only kidding. He must like me, for he has stuck with me through all this last 5 years.

I have also done extensive research on my family history. I have 11 branches traced back 8 generations. The proper spelling for my name is Bescht and my mothers maiden name was Kunzelmann. My ancestors also came over in the 1730s.

Well here is my first attempt at Spaghetti sauce. There are eight pints plus two containers for the freezer. DH decided that he wanted to try some for supper so that is why there is just one with the blue lid that was to be frozen. It was yummy! :-D

carolyn keiper made me realize I haven't come up for air in a while. I have been preserving food like crazy....

Here is what my fridge looked like when I started:

    220 limes $6.00 total

9 large cauliflower heads $9.00 total

There was even more out in the hot tub room.
    Apples, more tomatillos, and pears.

I have the rare privilege of having my hubby help me make apple sauce today. He does love to work with me in the kitchen. Mainly it's because he has a built in cleaner upper...but he says it nice to be here with me.

Diced and froze the last few bell peppers out of the garden. Got maybe about 12 cups.

Yes, lime juice in tea although others suggested it goes in another kind of drink but I really wouldn't know about that. ;)

My pickled cauliflower is a good side dish. My sister takes it home with her just for a snack.

Done with the Lime Rind. All dehydrated and ground. So out of 220 limes I got 4 cups of powered rind.

Thanksgiving is all over now and we ate the last of the mashed potatoes with dinner tonight. I made them into paddies and fried them.

The turkey carcass is all gone too. I made broth. I broke it down, added water, celery, carrots, onion and let it cook for hours and hours. I strained it with cheese cloth, let it cool and stuck it in the fridge. I took all the fat off this morning and canned it. I got 7 pints.

I also made the makings for asparagus soup weeks ago. I finish it when I open it. Cream doesn't can well. I got 6 or 7 pints.
