Roasted Cauliflower

    1 large head cauliflower, cut in 1 inch florets
    4tsp olive oil, divided
    2 cloves garlic, crushed
    1Tbs lemon juice
    1/4 tsp salt twice
    1tsp roasted sesame seeds (chopped english walnuts are good)
    2Tbs tahini
    Place oven rack in top position. Preheat to 425F
    Toss cauliflower florets with half the olive oil and 1/4 tsp salt
    Spread single layer on baking sheet. Bake 12-15 minutes till fork tender and slightly browned.
    Meanwhile, heat remaining 2tsp olive oil over meduim heat (watch this)
    Saute garlic in oil until fragrant. Add tahini, salt, lemon juice and 5Tbs water. Simmer and stir for 1-2 minutes. Toss with warn cauliflower and seeds. (or nuts)

    This sounds great Bethie. Sure jazzes up cauliflower from the sounds of it.

    Tahini is ground sesame seed paste. It is the primary ingredient of hummus which I make all the time. Hummus is really just a bean dip made out of garbanzo beans.(chick peas) Very healthful. Buy tahini in the specialty section of the grocers, it will last forever. 8)
