    Becky got me started because she said when she grew up in Maine the term corned beef was for a lot of cuts not just brisket. Now that brisket wants 10 or more dollars a pound for a sorry cut I thought to myself it is time to corn a variety of other cuts. This is my first effort. It smells wonderful.

    Dinnier tonight is home made Corned Beef, Carrots, Zucchini and Yellow Squash with a large Vidalia sweet onion, Russet Potatoes Au gratin.

    It came out less salty than the commercial version by far. McCormick brand has a pickling spice that has more ingredients though I added juniper berries it was not necessary. This was made with Mortons tender quick curing salt, which has sugar, at 1 tbsp per pound of meat disregard the weight of the water. It took 9 days to cure, but appears to have gotten through the center. I had trimmed heavily as I want scraps for beef stock.

    Who eats at restaurant's? bad stuff in their food. We watch what we eat and not much red meat for us…no sugary foods and way toooo much salt is their food just loaded .
    Not healthy for us . All our food is prepared at home no boxed foods and all that stuff. Even no sugar in icecream.

    oooh my goodness that corned beef looks so yummy. I am on my way to the store I’m. Gonna get one. It’s been a years since we have had some … captors and cabbage and … pie… what a fantastic feast…

    It is kinda feasty. Glad for the opportunity really. Becky makes that pie...somehow. I know she whips cream for the topping but I am not sure about the cadmium part. Cocoa I think, some pudding type recipe.

    Bean, rice, and cheese casserole. It's almost the same as a bean and rice burrito but no tortilla and it's in a casserole dish.

    What kind of a cut was that one DM? That looks really good. We avoid the corned beef because of the high sodium for Hubby. He does miss it for a nice dinner or ruben. Nice that it is less than the commercial ones. Wonderful feast there!

    That sounds fabulous. There is something about rice and beans. So comforting and tasty. :)

    That was a brisket. My friend was given a 18 lb packer so we split it up, I bbqed half and corned half and split it back with him.

    Thanks and yes, i chop up the garlic put in frying pan with a bit of oil and add the chilli then the chopped red onion, Cook it until the onions are soft.Fresh chilli, well really it's sort of pickled, i put them fresh and quartered in malt vinegar and it keeps for years. That way i don't have to touch the chillies very much, it goes through any gloves that i use.

    I was wondering about when you said "wheat free". What flour is that? Rice?

    I make my own mix. It is different ratios of white rice, brown rice, tapioca, arrowroot, cornstarch, whole milk powder and xanthum gum. ( It is based on the "Better than Cup 4 Cup flour recipe") Today I made pizza shells for myself, and then one for Hubby. Thanks to you I figured out how to make my own Mozzarella for the first time :) :).
