What to do with a huge harvest of zucchinis?

    Hello All,

    As is often the case, I've had a bumper crop of zucchinis and want to use it to experiment with some new recipes.

    Curious, as to what your favourite zucchini recipes are?

    Great looking zucchinis! I use mine in stir fry, tomato sauce, I stuff them and top with cheese, bake them into bread or brownies, and most recently I made zucchini relish! I haven't found a zucchini recipe I don't like yet!

    Just listen to all of you. This Summer is the first time I started eating these things. I love them grilled with EVOO salt and pepper.

    Now I wanna try these other ways of fixin them....

    There is double chocolate cake, zucchini spice cookies, zucchini cheese fry biscuits, zucchini bread. I can quart jars of zucchini, onions, and tomatoes. In the winter I pull out a jar and slice kielbasa sausage in it, heat and pour over rice. The last could be cooked fresh also. If you need the recipes let me know.

    Use a potato peeler to slice long thin strips, use like spagetti,, stir fry a few minutes with mushrooms and onion,, top with your favorite spaghetti or marinara sauce and parmesan cheese. And I always make lots of zuchinni relish. Both hot and mild.

    I love zucchini and sauté them often as a side, with a little onion and a sprinkling of parmesan cheese. I also have a killer zucchini bread recipe! They're also great on the grill. Just slice down the middle, toss in a little oil, sprinkle with salt and pepper, and toss them on the grill. Voila!

    But here's the thing; zucchini are very mild tasting so you can use them in all kinds of recipes as a filler or extender, and no-one will know the difference. When my kids were little I added them to everything because veggies weren't my kids' favorite. I used them as an extender in my meat loaf, in place of crackers or oatmeal or breadcrumbs, just grated in, to make the meat go further. I've grated them into spaghetti sauce, stews and soups too, with my kids none the wiser.

    They're a very versatile veggie and not many people take advantage of that fact. ;)

    I make Zucchini pancakes. Yum Grated zuke, egg, onion cheese. So good with sour cream topping...

    I also grate it and put 2 cups in a freezer bag to freeze. When I want to use it I just let it thaw enough to separate and make zucchini bread, biscuits or cake. It is easier and uses a lot less freezer space that freezing the bread.

    You all have my mouth watering with these recipes. I'll be sure to try them. It's nice how the simplest ones for fresh produce are always most delicious.

    Love to add grated zucchini to boxed chocolate cake mixes. Makes the calories seem less fatter. Use my vita-mixer to blend it all together.

    I'm going to try a new recipe I was told about. No recipe but was told to take out 1/2 cup of the grated zucchini and add 1/2 cup of very well drained crushed pineapple. I'll let you know how it turns out.
