Where are you KK ? Need recipes !

    I am into sweet potato leaves ! Easy to grow,,almost without soil but need recipes ! Help !

    Hi Mart :D, sorry I did not come this way for awhile.

    We always have our sweet potato leaves stir fried and it is a very simple recipe with no measurements ... just by taste :)

    Ingredients
    A bunch of sweet potato leaves depending on how much you want to eat.
    Garlic depending on how much you like garlic.
    Soya sauce to taste.

    Optional add on
    Nam pla - Thai fish sauce, it gives a nice flavour to the dish.
    If nam pla is not available then you can use bonito flakes as a garnish, this also add extra flavour.

    Procedure
    Preparation for the sweet potato leaves.
    Separate the leaves from the main vine with the stalks attached to the leaves.
    The vine is fibrous so not nice to eat :) except for the part where the bud is about 3 inches of it is tender.
    Separate the stalk from the leaves and peel off the skin from the stalk. The skin comes off easily when peeled with fingers and it is also not nice to eat so discard the skin. Break the stalk to about 2~3 inches and as for the leaves you can keep them whole if they are not too big.
    Wash the leaves and stalks after the preparation and leave it aside.

    Preparing the garlic.
    Take at least 6 pips or is it cloves.
    Place the garlic cloves one at a time under a knife on a chopping board and pressed it down with your hand crushing it.
    Once crushed remove the skin.

    Cooking.
    Heat up a wok (make sure it is hot enough to get the "wok hei") or frying pan and add some oil. You can use any kind of oil except olive oil, the best oil to use is lard.
    After the oil is in the pan throw in the garlic and sauté it until it is aromatic ... yum!
    Now add in the sweet potato leaves and stalks and stir fry controlling the heat so that it will not burn.
    Add in some water to help in softening the vegetables.
    Stir fry it until the the softness is up to your satisfaction.
    Add in soya sauce or nam pla or salt to taste.
    Remove the dish from the pan or wok into a plate.
    Garnish it with bonito flakes and if you like some heat sprinkle it with chili flakes.

    Ahhhh !! Thanks KK, I usually have fish sauce but probably not as good as yours ! The first ones I tried were not tender enough for stir fry,, have more growing and will pick sooner !
    These can be grown almost without soil so they are perfect for small spaces ! More people should try them !
