I need a recipe for tomato or V8 type of juice

    Good Afternoon everyone Iwas wondering if anyone had an easy recipe for tomato juice or V8 juice and maybe I could freeze it.Any comments would be appreciated.

    Margie, I have an old cookbook that belonged to my grandmother and inside of it I found her handwritten recipe for tomato juice.I've never made it but I had enough of hers to know that it was very good. I don't know if it is what you are looking for or not but here it is:
    Peel tomatoes and boil for 15 minutes until soft. Let cool and put into blender. Use puree setting on blender. Strain through wire strainer to remove seeds. Bring to a boil with salt added to taste and a little sugar.
    She does not give any specific measurements. I guess she was so used to making it that she had it all in her head! Anyway maybe you can use this. If you try it let me know how it comes out. :stew1:

    here's one i have been using the last couple of years...i use a little less sugar, and also add a bit of Blasamic Vinegar...and garlic...

    V-4 TOMATO JUICE COCKTAIL

    18 lbs. ripe tomatoes (7 qts. juice)
    1/4 c. chopped onion
    2 c. chopped celery
    1 c. chopped carrots
    1/2 c. sugar
    4 tbsp. picking salt
    1 tbsp. celery seeds

    Skin tomatoes. Cut tomatoes into kettle. As it boils, add other vegetables, salt, sugar and spices. Simmer uncovered 20 minutes. Put through sieve or food mill. Return juice to pot and boil. Pour into 7 hot quart jars. Process pressure cooker 5 minutes at 5 lbs. or boiling water bath for 35 minutes.
