Crunchy Rice Snacks

    These are a bit on the healthy side of snacking, and still very delicious. They will satisfy your sweet tooth without going overboard on calories.

    Ingredients:
    *1/4 cup firmly packed Brown sugar
    *1/3 cup light corn syrup
    *1 tbsp honey
    *1/4 cup Peanut or Almond butter
    *1/2 cup Hershey's chocolate chips
    *4 cups Crisp rice cakes/snacks, broken up
    *1/4 cup nut bits, such as pecan, walnut or sunflower seeds

    Combine the sugar, honey and corn syrup in a 3 quart saucepan. Cook over medium heat until the mixture boils and sugar dissolves. If it begins to crystallize on pan sides wipe it down with a moistened pastry brush. (Important!)
    Stir in the Peanut or almond butter; and chocolate chips. Add rice crisps and nut fragments, stir until all is well coated.
    Press the mixture evenly and firmly into a well buttered 13 x 9 inch pan using a buttered spatula or buttered hands. Allow them to cool, and then cut into 24 squares. Store in airtight container. YUMMM
